Looking for ways to spice up your avocado on toast? Look no further than a sprinkle of Cumin, Coriander & Fennel (CCF) topped with some black cumin (Nigella Seeds). These spices add a nutty, earth, sweet and flavourful depth the the avocado.

You can play around with whatever ingredients you have on hand. I love the sourness and saltiness that the tomatoes and feta bring to balance out the creamy avocado.

Spiced Avocado Toast

Ingredients

  • Sliced sourdough or rye bread
  • 1 large ripe avocado
  • 1 tbs crushed Cumin, Coriander and Fennel (CCF)
  • Sprinkle of nigella seeds (black cumin)
  • Lime squeeze
  • Truss cherry tomatoes
  • Handful of baby spinach
  • Crumbed vegan feta to top

Directions

Place the cherry tomatoes on a hot pan and heat until slightly charred

Layer the bread with avocado, baby spinach, CCF mix, lime and top with tomatoes, feta and nigella seeds.
