Nothing beats a classic, tried and tested pumpkin soup recipe. The natural sweetness from the sweet potatoes, carrot and pumpkin creates a dreamy balance with the spices of turmeric coriander and pepper. This is a nourishing and comforting dish that I never need to think twice about changing up as the combination of all ingredients work so well together.

Turmeric Pumpkin Soup

Ingredients

  • 1 tsp oil/ghee
  • 1/2 a pumpkin cut into chunks
  • 3 small sweet potatoes diced
  • 1 carrot diced
  • 1 leek sliced (white part)
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • Sprinkle of black pepper
  • 1 tsp salt
  • 2 cups vegetable stock (until veggies are covered)
  • Pumpkin seeds to garnish

Directions

  • Heat oil/ghee in pressure cooker
  • Once warm, add leek
  • Add coriander powder and fry until leek is light brown
  • Add in the chopped veggies and stir to combine
  • Cover veggies with vegetable stock
  • Add turmeric powder, pepper and salt. Bring to boil.
  • Turn the heat to low-medium, cover the pot and turn on the pressure cooker. After 2-3 whistles switch off and let it sit for 10 mins.
  • Open up pressure cooker and blend using a handheld blender stick
  • Sprinkle some extra virgin olive oil over the top and pumpkin seeds
